Butternut Squash Spiced Soup

This will warm your belly and satisfy your senses!  This soup is infused with the Young Living Vitality Clove, Vitality Cinnamon Bark and Vitality Black Pepper all NON – GMO essential oils!  It is so simple to make, no sautéing, just chop, cook and blend!  I chop all vegetables approximately the same size.

In a large sauce pan (at least 4 quart in size) add:

32 ounces of chicken or vegetable broth (if you are not using low sodium broth do no add additional salt before taste testing!

1 medium onion peeled & chopped (approx 1 cup)

2 garlic cloves peeled & chopped

1 large or 2 small apples peeled, cored & chopped (approx 1 cup)

1 medium butternut squash peeled, deseeded & chopped (approx 4 cups)

2 medium carrots peeled & chopped

1 medium potato peeled & chopped

2 teaspoons salt (for low sodium broth only! Otherwise taste before adding)

Bring to a full boil then cover with a lid and reduce to medium heat for a gentle boil.  Cook until all vegetables are soft.  Pour the liquid and vegetables into a blender.  This entire recipe fits in my 64-ounce blender, but if you are using a smaller blender you may need to blend ½ or less of the recipe at a time.  Immersion blenders work well too.  Blend until very smooth.

Return blended soup to the original cooking pan and add:

2 cups organic coconut milk

1 drop Vitality black pepper essential oil

1 drop Vitality cinnamon bark essential oil

2 drops Vitality clove essential oil

Stir in milk while bringing back to a low simmer and adjust salt to your taste.   Serve with a sprinkle of fresh ground pepper and drizzle of coconut milk (optional!).  Store in the refrigerator up to one week.  This soup also freezes very well!
