My oily kitchen started off with just a few of the Vitality citrus oils, which actually is a great place to begin using essential oils in cooking. The citrus oils are more forgiving in a recipe if an extra drop or two gets added. Some of the ‘hot’ oils (not hot like spicy, hot like potent!) will overpower a dish, like oregano! To help prevent this I like replace the lid with a glass dropper, it is much easier to control the amount of drops that comes directly out of the bottle. I buy my 5 ml glass droppers online for about .60 each.
I like keeping my rack of Vitality oils next to my stovetop; it is convenient and helpful reminder to incorporate oils into dishes! I have replaced many of my dried herbs and spices with Vitality oils. The shelf life of dried & fresh herbs and spices is not good, and many of the dried are filled with extra salt and unwanted fillers. Although for presentations, I love to use fresh. I will often mix the same Vitality oil with fresh/dried, just allow for the additional flavor and reduce the amount of the fresh herb or spice.
Diffusing is a must in my kitchen! My essential oil of choice is Purification, it is an awesome blend of Citronella, Lemongrass, Lavandin, Rosemary, Tea Tree, and Myrtle essential oils, but there are so many of great choices! Purification is amazing for eliminating odors! Young Living has many diffusers to choose from, the one pictured below is Desert Mist, it has a candle flicker setting that is so soothing! I LOVE it!
