As I am exploring ancient grains and meatless meals, I found Kamut to be quite interesting and like many of the other ancient grains, very versatile. I liked the idea of it as a cold salad. My guess was spot on, this recipe is so delicious, nutritious and easy to make.
Kamut, aka Khorasan Wheat or Oriental Wheat & has a nutty, buttery taste.
According to Wikipedia “In 100 grams (3.5 oz) Khorasan wheat provides 337 calories and is a rich source (more than 19% DV) of numerous essential nutrients, including protein (29% DV), dietary fiber (46% DV), several B vitamins and dietary minerals, especially manganese (136% DV).” The RDI (Recommended Daily Intake) recommendations are used to determine the DV (Daily Value) of foods and is regulated by the FDA (Food and Drug Administration).
Found in health food & bulk stores, I personally prefer Bobs Red Mill Organic Kamut Berries. The addition of Oregano and Lemon Vitality essential oils to the vinaigrette gave this dish the perfect flavor! This chilled salad is so satisfying. It is easily a meal by itself or a side dish with the addition of chicken, fish or shrimp. Even a lunch salad served over a bed of your favorite greens!
Kamut, Black Beans & Feta Salad with Vitality Lemon & Oregano Vinaigrette
In a medium sauce pan add:
- 1 Cup Kamut
- 3 Cup Water
Bring to a boil, cover and simmer for 1 – 1 ½ hours, until tender, yet chewy. Drain & rinse allow to cool before adding addition items. Note, grain may be soaked overnight to reduce cooking time to approx 30-40 mins.
Add then toss well:
- ¼ Cup chopped Sun Dried Tomato
- ½ Cup chopped Fresh Parsley
- 1 Cucumber, cut bite size
- 1 Cup cubed or crumbled Feta Cheese
- 2 Cans Organic Black Beans Rinsed
- 1 Tablespoon Greek Seasoning
- Pink Himalayan Salt and Black Pepper to liking
Prepare vinaigrette in mason jar, blender, or I personally prefer Pampered Chefs Mix & Pour, it works perfectly for all my vinaigrettes.
- Juice of 1 Large Lemon
- ½ Cup finely chopped Onion or Shallot
- 6 Drops Vitality Lemon Essential Oil
- 4 Drops Vitality Oregano Essential Oil
- 1 Cup Grape seed Oil
Pour over Kamut & toss well, chill before serving. This makes about 7 cups of salad, refrigerate for up to one week.
