In a large bowl add
– 4-5 cups arugula and 4-5 cups chopped romaine (Organic Please!)
– 2 ears of corn cooked or roasted (cut kernels off husks cool before adding) or 1
can corn drained
– 1 jar drained and rinsed black beans or homemade!
– 1 cup shredded carrot
– 1 tomato chopped
– 1 red pepper chopped
– 1/2 cup crumbled feta cheese
Toss well
Cilantro Honey Lime Vinaigrette:
To the blender add:
– 1 small jalapeño finely chopped (more or less depending heat level desired!)
– 2 cloves crushed garlic
– 1/2 teaspoon finely grated fresh ginger
– juice of 1 lime
– 1/3 cup honey (raw is best!)
– 2 teaspoons balsamic vinegar
– 1/2 teaspoon pink Himalayan salt
– 1/4 cup fresh cilantro
– 4 drops Lime Vitality essential oil
– 1 drop Cilantro Vitality essential oil
– 3 drops black pepper Vitality essential oil
Start blender on low, slowly pour in 1/2 cup grape seed Oil, blend until cilantro is finely chopped. Generously pour over salad and toss well!
Sounds delicious! What does the Black Pepper EO taste like, meaning, it won’t make the dressing too peppery will it?

HI Mary! Great question! Like pepper out of the shaker everyone has different levels of intensity. The vitality pepper is quite potent, so I would suggest you start with 1 drop, taste and then continue to add more drops as you may like! I found 3 to be to my liking and did not overwhelm with too much peppery flavor. Please let me know how you liked it!
