In a large bowl add

–  4-5 cups arugula and 4-5 cups chopped romaine
 (Organic Please!)

– 2  ears of corn cooked or roasted (cut kernels off husks cool before adding) or 1
can corn drained

– 1 jar drained and rinsed black beans
 or homemade!

– 1 cup shredded carrot

– 1 tomato chopped

– 1 red pepper chopped

– 1/2 cup crumbled feta cheese

Toss well

Cilantro Honey Lime Vinaigrette:

To the blender add:

– 1 small jalapeño finely chopped (more or less depending heat level desired!)

– 2 cloves crushed garlic

– 1/2 teaspoon finely grated fresh ginger

– juice of 1 lime

– 1/3 cup honey (raw is best!)

– 2 teaspoons balsamic vinegar

– 1/2 teaspoon pink Himalayan salt

– 1/4 cup fresh cilantro

– 4 drops Lime Vitality essential oil

– 1 drop Cilantro Vitality essential oil

– 3 drops black pepper Vitality essential oil

Start blender on low, slowly pour in 1/2 cup grape seed Oil, blend until cilantro is finely chopped. Generously pour over salad and toss well!
